Besides, we know you're more than capable with your weapon, that's not the point..." the point is to shave off the couple of seconds or so when reacting to an attack, to begin to sense when it's coming, to listen for it and go into fending it off seamlessly.
"During the night when we're asleep--" or rather, when John's asleep, as Sherlock sleeps very little, so this accommodation is mostly for John, "is off limits. As should be showers and meal time."
Sherlock would like to avoid John choking on his food because he'd leaped on him while he was having tea, or needing to phone ambulance after taking John down in the shower. That's not to say that this idea had been devised with pure intentions. There was the obvious added bonus of putting to the test his conclusion about John's reactions to that particular brand of attack.
"I think given the limits I've laid out, we can fairly well control the risk. Besides, you're a doctor, and we're not really going to harm each other. We'll stop when the victim calls for mercy."
Clearly, the point wasn't to seriously hurt each other.
